Coconut Cream Frosting


  • 1/2 cup butter
  • 1/2 cup shortening
  • 1/4 cup cream of coconut
  • 2 lb. package of powdered sugar
  • 1/2 cup whipping cream
  • 1 tsp. clear vanilla
  • 1/2 tsp. coconut extract
  • 1/4 tsp.salt


  1. Beat first 3 ingredients at high speed with an electric mixer until creamy. Gradually add sugar and remaining ingredients, beating at a low speed until blended. ( Prepare frosting 1 recipe at a time)

Had to add about 3 more cups of powdered sugar to make this frosting thick enough but the taste is wonderful. Will definitely use again. Thank you!
