This is a good filling to put with butter pecan cake mix.
Butter Pecan Mousse Filling
Ingredients
3/4 cups pecans
1/4 cup sugar
1 tablespoon melted butter
1/4 cup brown sugar
1 cup heavy whipping cream
2- 8oz cream cheese, softened
1/2 teaspoon vanilla
Instructions
Coat pecans with melted butter, bake on a baking sheet @ 350 about 5 minutes until toasted. Chop finely. Set aside. Beat cream cheese, beat in sugar, vanilla, and whipped cream. Gently fold in pecans.
I really enjoy this recipe, but i candy the pecans in melted butter and brown sugar before I toast them.
