I had my first vegan request, tried one recipe, which failed miserably. I came across this one, and it was FANTASTIC. Even my BF, who’s a meat-and-potatoes kind of guy, tried the vegan cupcake with vegan vanilla frosting and loved it!
Ingredients:

1/2 C
shortening
1/2 C
soy butter (Earth Balance is good)
3 1/2 C
confectioner’s sugar (powdered sugar)
1 1/2 tsp
vanilla
1/4 C
soy milk (or rice milk. I used vanilla flavoured soy milk)
Directions:
Cream together shortening and soy butter, then add confectioner’s sugar and beat for a couple of minutes. Add soy milk and vanilla, and beat for 7-8 minutes, until fluffy.
You can adjust the consistency of the frosting by adding more soy milk or sugar.
