This is the best coconut cake ever. A change from the traditional coconut cake with 7 minute frosting. Try it! I know you will love it.
Sour Cream Coconut Cake
1 box yellow cake mix
1 C. milk
1 pkg instant vanilla pudding
1-8oz. cup sour cream
1 1/2 c sugar
12oz. fresh frozen coconut
Mix together filling ingredients and set aside.
Mix together ingredients for cake and pour into two prepared 8 inch round pans. Bake as directed on package.
While cake is still warm; split each layer into 2 layer. Place 1 of the four layers on cake plate. Spread with some of the filling. Repeat with other layers. Top layer should be cut side down. Frost top and sides with remaining filling. Refrigerate over night.
