I am having a hard time keeping them on the sticks, do you have any suggestions? Thanks!
Mine kept slidding down the stick also. I had to use some extra buttercream frosting on the bottom of the cake ball to "glue" it to the stick, but I think I might try royal icing next time and see if that works better.
Apparently sticking the lollipop stick in some of the melted chocolate before inserting is the trick.
yes dip the sticks in melted chocolate first..let harden then insert before dipping.
I only use about 2/3 cup icing added to the crumbled cake. Mix, form balls and freeze for about 15 minutes. You do not want to freeze them all the way or they will expand after you dip them causing cracks in the outer chocolate. If using lolipop sticks, dip them in melted chocolate and push into ball about half way down. Return to freezer for a few minutes to set. I only take out 4 or 5 at a time to dip in melted chocolate or they get too soft and break apart.
In the ingredients, cream cheese is mentioned. Is that in place of the buttercream.?
After you push in the lollipop stick, to make the hole, pull it back out and dip the end of the stick into some melted chocolate. Reinsert it, and set it aside until the chocolate hardens. Then when you dip the cake pop into more melted chocolate, the stick should stay in place. Hope this helps.
or jou can take a very thin piping opening made with parchment and pour the melted stuff into the hole and then put the stick in and pray.
