I looked for a filling recipe to replace store bought, canned pie filling, and came up pretty empty handed. I hope that this helps someone else out.
Ingredients
- 8 medium/ 3 lb bag of granny smith apples
- 4 cups + 1/2 c water
- 1 1/2 T lemon juice
- 1 c white sugar
- 1 c packed brown sugar
- 1 t ground cinnamon
- 1/4 t nutmeg
- 1 1/2 t salt
- 1/2 c cornstarch
Instructions
- Peel and core apples, and then chop them into very small cubes. Place apples in pot and add the 4 cups of water, and all other ingredients except reserved water and cornstarch. Stir frequently, and cook until apples are soft, about 25-30 minutes. Mix remaining cool water and cornstarch, and slowly combine with apple mixture. Stir frequently until mixture begins to thicken. Remove from heat. Filling will thicken as it cools.
I used to do something similar to this. Only I put it in canning jars and processed it in a water bath canner. I had homemade apple pie filling all winter long. 1 quart to 1 pie It was wonderful! Just may have to do that again now that apple season is upon us. Thanks for the reminder!

Thank you! Please let me know how it turns out for you when you try it. Be sure to whisk very well once you add the cornstarch. It's easy for it to clump if you're not watching since the apples make the entire mixture clumpy.
