Carrot cake in an electric pan

This is an easy way to bake your carrot cake. I do it here because is easy and saves energy. (My stove is 220 watts) So when I run out of snacks for my boy I bake it early and he gets his snack for school fresh, moist and tasty.

Ingredients

  • 1 cup of flour
  • 2 eggs
  • 1 cup of sugar**
  • 1 tsp of cinnamon
  • 1 tsp of baking soda
  • 1 1/2 cup of minced carrot
  • 1/4 cup of nuts
  • 3/4 cup of canola oil
  • Frosting and filling:

  • 4 oz of cream cheese
  • 1/2 stick of butter
  • 1 cup of sugar powder (10x)
  • 1/2 tsp of vanilla

Instructions

  1. Because I have Lifetime sauce pot pans and its grater I grate the carrot using the smallest hole and chop the nuts. After this I mix sugar, oil and eggs. Then mix together in another bowl the dry ingredients that are flour, cinnamon and baking soda. Add this mixture to the sugar, oil and eggs. Then add carrots and nuts. Light mix with the mixer. Grease the electric sauce pan and put the mixture in 200C for 3 minutes and then lower the temperature a little more. I use a cake tester to check if cake is done.
    Filling or frosting:
    Mix well all the ingredientes so there are no lumps and put over the cake when is not hot. If you refrigerate the cake the frosting will gain consistency and gets better. On top of the frosting I put aditional nuts. Believe me, this cake tastes awesome! It is easy, less ingredients and the right size for this electric sauce pan. Try and let me know how it goes. Enjoy.
    For diabetic instead of regular sugar use Maltitol. It is a liquified sugar sold on bakery stores. And in the frosting you can use Splenda or any other substitute of sugar. Pour like 5 bags of your selection and taste it. If need more you know how much you can add.
