Well, I finally found a chocolate cake that worked, and mixed half ganache with half melted candymelts, and the outside turned out perfect. Put on a thin layer, let set then put on a thicker layer, using a fork for the bark. Filling was 2 cups heavy cream with a box of instant chocolate pudding...............OMG - wasl licking the litle bit left in the bowl! Looks like I am getting the hang of this! However note to self.......remove the waxed paper used to catch drips BEFORE the chocolate hardens!
