Customer not very keen on icing wanted a decorated cake so I came up with the option of fruits & nuts. Cake was a rum fruit cake, I made a rum apricot glaze to attach fruit & nuts & made a rum syrup to glaze fruit & nuts when attached. Then finished off with a thick bow around cake.
