I didn't do anything to keep them from browning because I served them right after I put on the banana slices, but an acidic juice such as lemon, orange or pineapple juice if brushed on or soaked in will keep them from browning

After they were baked I made an easy banana " mousse " which was basically banana instant pudding whisked up in the mixer with a carton of heavy cream until it got to the right mousse like consistency.
