This is my 2nd wedding cake, but first attempt at fondant. I definately know what I need to do differently next time! The cake is French Vanilla with a buttercream frosting/filling. The daisies are sugar paste that I purchased and colored myself.
What I would have done differently.....did I mention this was my first time using fondant? Well, it is white chocolate fondant and what happens when you put chocolate on something cold? It hardens. So, now I know to be sure that the cake is room temp before putting the fondant on. I do have a secret: buttercream is the same color - I filled the wrinkles with buttercream because the wrinkles would not smooth out. If you have other ideas, please let me know!
