4 big layers....very hard to transport, but very fun design! This one was 2 layers of coconut and 2 layers of french vanilla, filled with key lime curd and frosted with key lime buttercream.
For the key lime buttercream, I actually just beat in fresh key lime juice instead of milk or water. I have also beat in key lime curd to a regular frosting recipe...that actually turned out tastier than the juice! And, no, I didn't use dowels...I probably should have...it was a headache to transport!
