Spumoni Cake
Inspired by the Italian dessert spumoni, this is my version of one of my favorite treats. Layers of moist cherry, chocolate, and almond flavored cakes covered in Italian buttercream, a milk chocolate drip and of course, cherries on top!

Thank you Regina! I had never heard of an Amarena cherry until I made this cake. Nice addition. The more tart tones cut some of the sweetness of the maraschinos.

Another reason I am drawn to it is because I used to go to lunch with a good friend, to a local Italian restaurant. And she would always give me her desert.....a scoop of Spumoni! It's the only time I ever have it.....and because of our current conditions, and limitations, I don't know when we'll be able to go do that again.
