Sue's Birthday Cake

This is a rich carrot cake, with raisins, pecans and pineapple, with cream cheese frosting. The flowers were made with Sugarin Flower Paste by Arati Marji. The coordinating macarons are filled with cream cheese frosting and Swiss meringue buttercream.

Thank you, sweet Laetia!  It really was good.  It is a recipe I developed about 10 years ago  in an attempt to replicate a local restaurnat's signature carrot cake for a co-worker.  In the end, she preferred this cake over the restaurant version.

Thank you  so much, sweet Regina!  The left overs went home with Sue and I know she shared the cake with our friends who were unable to attend, but I think she kept the macarons for herself, lol.
