Thank you, KitchenSix!  Sculpting with modeling chocolate (this piece, however, is Saracino Modeling Paste) is my favorite thing.  I watched YouTube tutorials on clay sculpting, then did my chocolate figures the same way.

I hadn't seen this one, Sandra. Just beautiful! I think I will try Saracino for my figurine. This is very detailed. Nervous about making my own modelling chocolate.

You say above you used Saracino and gum paste. Did you knead the two together?

No, Achilles is made entirely of Saracino Modeling Paste.  The gum paste was used to make the drapery on the pedestal.  That's why they are slightly different whites.  The Saracino is brighter white.
