Vegan Wedding Cake

This was a wedding cake for a bride that requested no eggs or dairy in the cake. Its a chocolate cake with dairy-free chocolate buttercream, covered with ganache and satin ice fondant. I knew she wouldn't eat the flowers, but wanted to keep the cake 100% vegan so that meant vegan royal icing and no gum paste only fondant.It was a challenge! With a little CMC, the Satin Ice fondant worked well for the flowers.

Barb1990- thank you!  It was delicious. We had a tasting before the event where the bride and groom chose their flavours. They even order a mini version of their wedding cake (one tier and a yellow flower) for a post-wedding celebration. There are many great recipes for baking vegan (no eggs or dairy) these days, I don't feel they have to compromise too much on flavour to have a moist and tasty cake...
