I started to make a three tier topsy turvy cake for a co workers wedding - she wanted three tiers and then she had bought edible wildflowers to decorate the cake with. I had nothing but trouble with my homemade fondant when I tried to cover the cakes the night before - after putting the fondant on and off a couple of times I gave up at two in the morning and decided to run to the store in the morning to find already prepared fondant as a last ditch effort - still had problems with the fondant tearing - so ended up with only two tiers , covered the top tier with buttercream rosettes and hid the remaining flaws with the wildflowers ! wow what an experience! carrot cake with cream cheese filling
