Carrot cupcakes with a little bit of grated apple in the cake as well as toasted pecans topped off with cream cheese Swiss meringue buttercream (which I struggled a lot with) but eventually got to firm up and piped them into pretty ruffles using the 070 Specialty Ruffle Metal Tip. Maripan was colored orange, shaped into carrots, textured with a knife, and dusted with cocoa powder to look realistic. The carrot tops were bits of parsley.
