3 tier cake for 80th birthday celebration for 80 year old twin sisters. Tiers are 8", 10" and 14". Top tier was dairy free pound cake with dairy free buttercream. Middle tier was chocolate almond cake with whipped chocolate ganache filing, iced with chocolate ganache and then white chocolate ganache. Bottom tier was almond pound cake with buttercream filling and iced in white chocolate ganache, covered in ivory fondant. 29 hand made gumpaste roses in 4 sizes, representing 4 generations of family. The roses were yellow for the "Yellow Rose Of Texas" where the twins were born. The bottom tier was decorated with pleated fondant impressed using a piece of a Wilton impression mat. The middle tier was decorated using the Billowing Technique by Susan Trianos who was a huge help! The top tier had a "crown" of gold pearls. The roses were scattered around the cake. The gold buttons were made from a mold I made from a button I found at a fabric store, then painted using lemon extract and Old Gold lustre dust.
