Yummy cakes made with ground roasted pistachios and topped with just a little icing for sweetness. This was my first try at the recipe so I overfilled the cases a little so they rose a little more than I wanted as I wanted to do the icing to fill just to the top of the case. The cake itself is so light yet so moist, I will definitely be making these again!
