I made these cupcakes for my daughter's 5th birthday. She wanted green and pink cupcakes and these were the green ones. Chocolate cupcake with mint buttercream frosting with mint extract added for flavor. Top with green sprinkles and 1/2 an Andes mint. Yummy!
