I made this cake for my daughter's NCAA National Letter of Intent Signing to play for Drury University Women's Golf. Each tier is made of 2 layers of red velvet cake and iced (my daughter does not like fondant) with cream cheese frosting. The green on the top is buttercream frosting and the ball is a candy mint. The letters, feathers, and paw prints are gumpaste.
