Noel De Buche

I became obsessed with Noel buche, when i saw something on Tv years ago about this French Cake pastry. Folk lore is you make them and make look like a log. Then given as gifts so that they can bring good luck, prosperity, and good will in the new year. My Noel de buches have gum paste holly leaves and white pointsettas, I am making sme with red pointsettas. The sponge is chocolate with a french butter cream filling. The bark is a chocolate caramel butter cream. there is opal sugar sprinkled on the log to give it a glisten like has some light snow on it.
