December Birthday cake for my mom. Based on a "Surprise Cake" that she use to make 20 - 30 years ago. White cake with a thick filling (the same size as cake layer) of chopped maraschino cherries, crushed pineapple, chopped pecans, shredded coconut and cream cheese. With cream cheese frosting sprinkled with coconut. Poinsettia made with three sizes PME Calyx cutters out of gumpaste. Used small leaf cutter from the JEM Hydrangea cutter set.
