Another fall themed cake. 6 inch carrot cake, cream cheese icing. The customer requested a diabetic version, the icing certainly fit the bill, not so sure about the cake. Did the best I could, though. I was very pleased with the taste too! The icing was made with (among other things) a little low fat cream cheese and lots of sugar free cool whip - it was still yummy! MMF pumpkins, acorns, and sunflowers. Gumpaste leaves.
