Iced in BC. I made all the coral out of royal icing. For the water, I carved it out and painted it -- very fun! I covered the "rock" with cookie crumbs. Finally, the palm trees are royal icing on top of a cookie stick. This was a very fun cake to make and my daughter loved it!
