I made this cake for a friend of mine. It is completely gluten-free. It is finished in IMBC with some fondant accents and piped ganache. The bottom tier is chocolate cake with 2 layers caramel buttercream with toffee crunch and 1 layer of almond ganache. The middle tier is red velvet. The top tier is vanilla cake with peanut butter pastry cream and strawberry jam. Celiacs don't always get much choice in the way of dessert. I can't tell you how thrilled she was to have 3 different flavors for her cake! TFL!! Constructive criticism welcome!
