For my SIL's wedding cake. This is a cheesecake covered with fondant. It is a 6" and 8" cake. The cheesecakes were 3 inches high so I built them up 3/4 of an inch so they ended up being 4 inches high. See my other picture of the 'sheet' cheesecakes covered with ganache and chocolate cigarellos.
