Laura's Petit Fours on Cake Central

My first order of petit fours. Some are genoise and some are vanilla buttermilk cake. All have strawberry jam filling. Covered with my own version of poured fondant (butter and whipping cream added for better taste!). They were a little tough to get right, but once I got into a rhythm, it went pretty quickly.

I've had many requests for my poured fondant, so here it is: I put 2 sticks of unsalted butter in a large saucepan over low heat. Once melted, I added 2 tsp of almond extract, 2 tbsp whipping cream, 2 tbsp 2% milk, and about 2 tbsp water. Stir that up and add about 3/4 of a 2 lb bag of powdered sugar. If it's still too thick, add a bit more water. I keep this mixture over low heat the entire time I'm spooning it over each cake. That's it.
