Is this the type of cake we see in Chinese bakeries? I am looking for a recipe for that light, airy sponge cake. If anyone out there has tried a French Genoise or similar please let me know! If you have a recipe, that would be most helpful too icon_biggrin.gif

ps. Do you think a genoise would work as a cupcake as well?

I can tell you that it is a light airy sponge cake. I don't see why it wouldn't work in cupcakes. You could make some cute mini bundt cakes with the recipes I bet.
