We are having a bday part for my father in law next Friday.
Unfortunately I work 12 hour shifts Thursday and Friday.
So would my cupcakes be ok if I baked them Wednesday, stored in air tight containers (fridge or counter?) Decorated Thursday, and then we ate them Friday evening? I usually bake cupcakes the day of but I figure if I air tight them they would be ok for 2 days?
They should be just fine, but you could also pop them in the freezer overnight.
