I’m a hobby baker but was asked to do a naked wedding cake. I didn’t know you needed to have a cake recipe that caramelizes on the sides. I used my go to vanilla cake and it’s light and fluffy but the sides have crumbled. I have 4 tiers baked. I started icing one and it looks horrible. Any way to salvage these cakes? Help!
If you can get away with a "near naked" cake, it will probably be fine. You might suggest it to your customer. I actually prefer the near naked look and she might too, if she saw an example.
