Hi, creating a gingerbread house and wondering the best way to go about doing the siding. Should I cut strips of fondant or use royal icing. Want it to look super realistic. Thanks for all the help!! Attached below is a picture of a house with siding similar to the look I am going for. Siding On House

You are on the right track with the strips of fondant or gum paste, in my opinion.  You should probably cut your "boards" and allow them to dry a bit before applying to the gingerbread.  If they are relatively firm, it will be easier to apply in a straight line.
