Freeze, Refridgerate, Or Leave On Counter

I am baking a small wedding cake 8" two layers and 24 cupcakes -wedding is saturday-taking place two hours from my home at an informal family houseparty/bbq  so we are leaving friday afternoon to stay the night there and do not know if i will have access to the kitchen so wanted to have all completed before leaving home on friday.

i was thinking of timing--  baking thursday- frosting friday morning?  want everything to look nice and taste fresh.

my question is what is best?   i am making cakeman raven's rv cake for the wedding cake with buttercream frosting and possibly no bake cheesecake filling between the layer.  the cup cakes will be wasc and devils food (box) with buttercream (decor for cupcakes is sunflower using 366 tip)  the cake will be smooth and no decor or border just the bc.  

do i bake thursday and leave on counter and ice friday before leaving and then leave on counter until saturday or should i freeze and/or refrigerate before and/or after decorating.

we live in florida so lots of humidity if this matters.

what would your schedule be and how would you do it?
