I am a proficient self-taught cake designer and took a Hiatus for a year but have an order for my first geode cake, my question is what is the best way to store it without the Rock Sugar melting I have a commercial refrigerator but am concerned please advise.

I've only made one and I left it at room temperature, once the rock candy was added. It kept just fine.
