I need to bake a cake on Tuesday, freeze it that night & then carve it on Wednesday night. I'll be doing the actual decorating on Thursday night. I'm just wondering though, is it ok to carve the frozen cake and then put it back in the freezer and re-freeze it until Thursday? I wasn't sure if that was ok or if it would affect the taste or how the cake turns out. Thanks!

It will be fine.  It probably will not completely thaw out, unless you have very complicated carving.
