I need to bake a cake on Tuesday, freeze it that night & then carve it on Wednesday night. I'll be doing the actual decorating on Thursday night. I'm just wondering though, is it ok to carve the frozen cake and then put it back in the freezer and re-freeze it until Thursday? I wasn't sure if that was ok or if it would affect the taste or how the cake turns out. Thanks!

Personally, I never freeze a cake twice.  I find that it takes a toll on the texture of the cake, making it mushy and less stable.

I would only crumb coat the carved cake, cover it, and refrigerate it, at most, if it can't stay at room temp.
