Hi

I’m hoping someone can help me. I’m going to be making an ombré cake with different shades of green soon. I recently tried making cupcakes that were three different colors and they ended up really dense, likely from over mixing to get the color evenly distributed. My question is does anyone have any advice on how to color one batter multiple colors without over mixing or any other negative impact on the final product? I’ll be using Americolor Soft Color Gel Paste if that matters.

I made the mistake of using gel coloring before and it did that. I only use liquid food coloring to dye cake batter now. I use gel coloring for the frosting.

I've used gel color to color a rainbow tiered cake and it was just fine.  I mixed my batch of batter just until combined, separated it into six bowls in equal portions, then colored each a different color.  It did not require a lot of mixing to get it to come together.
