Help With Food Cottage Laws In Albuquerque

Hello,

I just found out I'll be moving to ABQ and am trying to figure out the Food Cottage Laws. 

I read somewhere where the County or City requires a sample of the product 14 days after production! And I also read that you must submit a very extensive, detailed business plan that includes production costs, waste costs, ingredient costs, break even analysis, profit margin, etc. which seems excessive for a home baking business.

The laws don't seem as straight forward as AZ so I'm wonder if there's anyone out there that can give me the Dummies' version of the requirements and do's/don'ts.

You are probably going to have to contact the authorities in the area— each county & city makes their own rules :(
