In my state home bakers are not allowed to use any dairy in products for sale.  This poses a problem as I would like to find something light and fluffy like SMBC to use in macarons.  American buttercream is too heavy and sugary.  Any suggestions?

When I make vegan items i use spectrum organic shortening.  Whips up beautifully and makes a super light and fluffy frosting.
