Hi! I just made water ganache (basically candy melts and water) to make a drip on a cake and I have some leftovers. I plan to use it again in a few days, can I just leave the leftover water ganache at room temperature or do I need to put it in the fridge?
It should be fine at room temp, if you keep it covered. Personally, I’d throw it into the fridge, though.
I too would refrigerate also. I’ve only left ganache on the counter if I’m using in the next 24 hours. Only takes seconds in the micro to soften.
What is to ruin? It is water and candy melts, both room stable. Do whichever you like. I would leave it on the counter.
