Hi. I am working on a four tiered marbled wedding cake with white chocolate mousse filling and I would like to layer frost and freeze the tiers ahead of time. Is it possible  to freeze white chocolate mousse and have it still maintain it's structure and taste? I am only planning to freeze the cake tiers for 5 days.

probably maybe -- you gotta test it -- just depends -- make a little, set some in the fridge and stick the rest in the freezer overnight -- next morning, set the frozen one in the fridge to thaw during the day -- that evening -- compare the two and see how it does
