Hi all

I will be making a fondant covered birthday cake for this Sunday (cake being picked up on Saturday).

It is a chocolate mud cake that I will soak with sugar syrup and fill and frost with a chocolate ganache (half milk half dark, 2:1 chocolate to cream). I plan on using a list brushing of sugar syrup over the chilled cake to adhere the fondant to the ganache.

I will be covering the cake on Friday night and have two questions:

1. Can I possibly make the ganache and syrup tonight (Wednesday) and torte and ‘dirty ice/crumb coat’ my cake on Thursday to save time and give it longer isn’t he fridge?

2. Will the cake be ok to stand outside at room temperature from Friday night until Sunday morning when it is served?

thanks!

Though I have never used it I’m almost certain it will be fine
