Hi. I am mainly a bread baker but have recently started to expand in to cakes. I have just made a full size Dundee fruit cake which took 1 hour 45 minutes to bake at 160c. My question to you all, is that I want to make the same recipe but to divide the mix in to smaller Muffin cases. However I am struggling to figure out what the baking time should be for the smaller size cakes. Does anyone have any suggestions for me?

Since I have never made a fruit cake of any kind this info might not apply but in general when I have made small cakes the time is about 1/3 to 1/2 what a full recipe would take.  You probably will have get what you want to know by trial and error.

I am unfamiliar with Dundee Fruit Cake, but I've made many, many fruits cakes in all sizes.  As kakeladi said, the cooking time is greatly reduced.  I used small bread pans, which are about 3" x 5" and, if I remember correctly, they took approximately half as long as the full size cakes.
