On my last two batches of cookies, the chocolate wouldnt stick to the cookies. (I had to take the chocolate off, freeze the cookies and then drizzle the chocolate on again.) I have used different types of cookies and different types of chocolate, but the choc doesnt stick unless the cookie is frozen. How do I get the chocolate to stick without freezing the cookies?

I don't really understand. Are you using ganache on your cookies?
