I’ll be using red velvet to make an armadillo cake.

For anyone who’s sculpted with RV, do you find the traditional recipe is substantial enough to hold up?  Or does a heavier, more dense RV work better?

I would sculpt it frozen -- red velvet can be a real pia -- crumbly

It should be fine for the armadillo.  Like-K8memphis said, carve while it is at least partially frozen and cover with ganache to stabilize.
