Everytime I try to apply ganache to the sides of my cake. It keeps sliding off. I’ve seen so many videos of ganache being put just as buttercream would. But mine always seems to keep sliding down. And it’s all a big mess. Especially when I have an acrylic disk on top but then ganache refuses to stay up!

Maybe the ganache is too warm or not thick enough. Could you try letting it sit out a bit to thicken up, or maybe add a bit more chocolate.
I thought the same as whatthedogate, sounds like it is too thin. I've never had any problem at all with the ganache sticking to the cake.
