Would an 8" and 10" cake be enough to feed 60. The style of cake the customer is requesting isn't a tiered cake so I'm wonder in if I should bake 2 separate but identical cakes? Thoughts and suggestions please and thank you.

yes that's big enough for 1x2x4 inch servings -- traditional size servings

you could also do two 9's

Do two 9 inch stacked "double barrel" style to be one tall 9"? Don't know the style requested, but an option and added "wow" for tall cake presentation.
