Can someone who is familiar with making this cake please advise re whether it is ok to cover it with a marzipan layer and then fondant and how long will it last if kept in a container in a cupboard for a wedding?  As it is moist inside hoping won't dry out if leave for a week or two?

I have no idea what type cake it is, so haven't a clue.  Sorry.

I spent some time on google checking on this.  I get the impression that marzipan and fondant aren't normal with this cake.  However, most people are going to peel the fondant off anyway, so it's probably not that big of a deal.

As far as leaving it in your cupboard for a couple of weeks, I don't think that's a great idea for any cake.  You could double-wrap it inside a box and freeze it - - I've never had a problem doing that with any type of cake.  Just be sure to defrost it slowly inside the wrapping so any condensation is on the outside, not on the cake.
