Simple Question About Croquembouche

This may seem like a silly question, but here goes.  I make tons of "cream puffs".  I have been thinking about trying a croquembouche.  My question is does the sugar used to form the "tree" make the puff really crunchy?

it doesn't make the puff crunchy -- but the sugar is very crunchy
